| Zusammenfassung: | Cooking and eating habits are exposed to established foods and ways of preparation, however in certain conditions these rules are set in a border position, especially in a Diaspora situation. This text proposes a new insight of the Italian cuisine and its contribution to the formulation of urban identities in São Paulo, Brazil. Sharp differences between locals and new inhabitants, such as Italian immigrants, create representations of homeland and open new ways for a particular interpretation of Italian cuisine. The absence or availability of certain foods was one of the factors that, in the long-term, fundamentally transformed eating habits, but also new techniques and life experiences contribute to create a cuisine where identity and differentiation are brought in evidence every day. Meals fulfill different vacuums and contrasts emerge in a new context, especially focusing on the female role. |
