From the 1860s onwards the Limousin region undertook to improve its local cattle breed by abandoning crossbreeds and introducing foreign breeds for the sole purpose of selection. This was the choice of big landowners and agricultural institutions (agricultural shows and societies, the herd-book later on). But well before this development, fattening had been displaced by the production of young animals, with cows becoming numerically dominant. Farmers’ empirical backing of Limousine cows, buttressed by the pragmatic stance of local notables well aware of the realities of the rural world, thus paved the way to the theory of improvement through selection.Cairn free access
