Description
Résumé:This article examines greening factors in the institutional catering sector. Based on a general model of organisational greening and 32 interviews in 10 different organisations, the public sector greening model proposed here incorporates drivers and barriers related to their organisational contexts and environments. It shows that greening this sector involves more than making a few adjustments to satisfy minimum legal standards – like the EGalim law for example – because it has an impact on the values of individuals and on all the functions within the organisations concerned, such as procurement, production and budgets, human resources, communications, and information systems. Relationships with external stakeholders are extremely important and, for performance reasons, coordinating the various stakeholders in a particular geographical area calls for public stewardship, especially from local authorities with the relevant territorial management tools.
